Here's a recipe that's healthy as well as enticing. Carrot cake is delightfully moist and rich in flavour. The combination of pineapples and carrots make the taste all the more better. Try out this recipe once and you'll find yourself making it again and again. It's fun to make and quite easy.

What Do You Need?

* Carrots grated - 6 cups* Raisins - 1 cup* Pineapple (crushed and drained) - 1 cup* Eggs - four* Brown sugar - 1 cup* White sugar - 1.5 cups* Edible oil - 1 cup* Vanilla essence - 2 tsp* All-purpose flour - 3 cups* Baking soda - 1.5 tsp* Salt - 1 tsp* Powdered cinnamon - 4 tsp* Walnuts chopped - 1 cup

How To Make Carrot Cake

Mix brown sugar with carrot and let the mixture rest in a bowl for an hour. Add raisins to this mixture. Preheat your oven to 350oF. Take two cake pans, ten inches each; smear them with butter and powder with flour.

Take a big bowl and beat eggs till they are light. Mix in sugar oil and flour slowly. Add the crushed pineapple to this mixture. Blend in the baking soda, salt, flour and cinnamon and stir. To this, add the carrot-raisin mix and walnuts. Spread out this cake mix in your greased pans.

Keep the trays in the oven and bake for 45 mins. When you insert a toothpick into your cake, it should come out clean. This is the consistency you'll need. Let the cake cool before taking it off the pan.

Now your cake's ready. Let's frost it with a lovely cream cheese frosting.

Fettuccine Alfredo the Traditional Way

It seems today that a restaurant cannot serve pasta unless Fettuccine Alfredo appears on the menu and even the grocery stores stock the sauce for this dish. It is always loaded with calories and no wonder. First you have the pasta, then the heavy cream and finally, to top it off, a generous portion of cheese. What would you expect, diet food?

This recipe is the traditional way to make the dish. It does not call for the addition of heavy cream so you get two benefits: authenticity and lower calories. Of course, if you must have a higher calorie count, and we all do at times, substitute heavy cream for the pasta cooking water.

This recipe is for four people.

3/4 lb of dried egg fettuccine
6 tablespoons unsalted butter
1/2 cup of cooking water reserved after you cook the pasta
1 cup or more of finely grated Parmigiana-Reggiano cheese (or other Italian grating cheese)
Salt and freshly ground pepper to taste

Melt the butter in a microwave safe bowl for about one minute, until it just barely melts.

Cook the pasta until done to your taste.

(I know contemporary opinion calls for pasta to be al dente. I happen to like it softer and to hell with contemporary opinion)

Drain the pasta but, before you do, don't forget the 1/2 cup of cooking water.

Toss the pasta, butter and cheese thoroughly, adding the pasta water to keep it moist. Serve with additional cheese.

I don't believe you will miss the heavy cream - this dish is wonderful without it and you will have the satisfaction of lowering the calorie count by several hundred calories. However, this still ain't no diet dish!
