For the dressing, mix mayonnaise, sugar, and red wine vinegar. Then coat the vegetables with the second mixture. Chill covered and serve.

Sweet spinach salad

Ingredients: concentrated orange juice, sugar, cider vinegar, chopped onion, salt, vegetable oil, poppy seeds, baby spinach, drained mandarin orange, and toasted almonds. Blend concentrated orange juice, sugar, vinegar, onion, and salt. Gradually add oil in a steady stream while processing. Add poppy seeds and stir. Place the mixture in a bowl or in a pitcher. Chill it on the refrigerator for at least an hour. Arrange spinach, mandarin oranges and almonds on a salad plate. Add the dressing and serve.
